Sour Cream Potato Salad

7 medium baking potatoes
3 hard-cooked eggs
1/2 cup sour cream
1/3 cup Italian dressing
1-1/2 tsp. horseradish  mustard
1/2 tsp. salt
1/4 tsp. celery seeds
2 celery ribs, sliced
3 green onions, sliced

Cook baking potatoes in boiling water to cover 25-30 minutes or until tender, drain and cool.  Peel and slice or dice potatoes; set aside.

Chop egg whites.  Press yolks through a wire sieve into a bowl; set aside.

Stir together mayonnaise and next 5 ingredients in a large bowl; add potato, chopped egg white, celery and green onions, tossing gently.

Sprinkle egg yolk over salad.  Cover and chill, if desired.  Yield:  8 servings.

Hampton's 400th Anniversary Weekend
Festivals, fireworks, live music, cake and more as the City of Hampton celebrates its 400th anniversary concurrent with the 11th Annual Blackbeard Pirate Festival.  On Saturday there will be a re-enactment of the classic sea battle between Lt. Maynard and Blackbeard, featuring two full-scale replica vessels in the Hampton Harbor. At the conclusion of the sea battle a presentation ceremony will take place in which Blackbeard’s severed head will be bestowed upon Virginia Governor Alexander Spotswood (1710-1722).
